Give Your Bread Machine Another Chance
by James H. Byrd 1. Here's a bread machine that makes dough better than it makes bread. 2. When the dough is ready, dust the cutting board with a light layer of flour. 3. Spray the baking pan with oil (optional). 4. Sprinkle fine corn meal onto the oil (optional). 5. Press air bubbles out of the dough. 6. Roll and tuck the dough into a loaf shape. Cut off a chunk for rolls if there is too much for the loaf pan. 7. Put your loaf and rolls into the baking pans, cover with a clean towel, and let it rise. 8. After the dough has risen, it is ready to go into the oven. 9. When the bread is baked, cool it on a wire rack. When you first acquired that shiny new bread machine, you had visions of homemade bread smells wafting through your home, and you imagined biting into a soft, warm slice of freshly baked bread with butter melting into the top.
